The Coffee Technicians Guild Summit is an event dedicated to educating coffee technicians around the world.


Tracking Your Extraction: A Technical Evaluation
Speaker: Marco Wellinger, ZHAW (Zurich University of Applied Sciences)
Explore the different chemical and physical markers that characterize an extraction. This lecture will compare TDS, acidity, caffeine and chlorogenic acid extractions of different grinders, machines and brew ratios. Next data on the evolution of the different markers throughout the extraction will be presented. Finally, data on grinding will be presented giving novel insights on how to characterize a grinders performance.

Basic Principles of Electricity
Speaker: Mike Khan, La Marzocco
What is electricity? This lecture will focus on the core concepts of electricity, how its generated, how it is used in coffee equipment, and techniques for considering and diagnosing electrical circuits.

The Effects of Grinders on Roasted Coffee

A comparative discussion of Burr styles, hot vs. cold grinding, dosing technologies and a look to the future of grinding.

Test and Measurement Instruments for Your Coffee Machine
Speaker: Allen Boney, RS Components
This lecture will discuss electrical test instruments and how they can be applied to coffee machines. Discuss how mutlimeters work, see examples of testing tools, practice safe use of electrical test equipment, and learn the importance of calibration. Attendees will review data logging, data sharing via wireless interfaces, and the future of measurement and electrical diagnostics.

Water and Machines: A Love/Hate Relationship

Why is water is so precious for our coffee and why it could be dangerous for our equipment? SCA tells us where to point at when searching for the “perfect water”, but how do we get there?

Coffee Equipment – Preventative Maintenance
Speaker: Steve Murdoch, Costa Coffee
This lecture will study the affect of equipment failure on customer perception, brand loyalty and ultimately customer spend and company profit. We’ll look at case studies on parts failure and how including this into a planned preventative maintenance program has reduced maintenance spend, sales and brand loyalty. We’ll also explore future developments in maintenance such as telemetry to reduce breakdowns and produce-site designed preventative maintenance programs to get better value from budget spend and protect high volume sales stores.

The Science of Cleaning Products

Everyone knows that cleaning of a coffee machine is important. But what makes an effective cleaning product and how do you know when to use a particular product on your machine. This lecture will discuss the science behind the cleaning products and what is required for in-depth cleaning of your coffee machine.
